Flourless and Eggless Chocolate Chip Cookie Pie

Enjoy the decadent flavor of a chocolate chip cookie pie without the flour and the eggs! This tasty cookie is healthier and sure doesn't taste like it! This recipe was inspired by Chocolate Covered Katie
Cook Time 40 minutes
Servings 1 pie

Ingredients

  • 2 15.5oz cans S&W Garbanzo Beans
  • 1/2 c. butter softened
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1 c. quick oats
  • 1 c. sugar
  • 1 c. brown sugar
  • 1 tsp. vanilla extract
  • 2 c. semisweet chocolate chips

Instructions

  • Pour beans in a strainer: rinse and allow to dry. Place beans in a food processor or food chopper and blend until smooth. Preheat oven to 350° F.
  • Combine beans and butter in the bowl of an electric mixer. Add baking soda, baking powder, quick oats, sugar, brown sugar, and vanilla extract. Mix until well combined then add chocolate chips.
  • Press the cookie dough into a greased 10-inch pin pan. Bake 35-40 minutes, or until a toothpick inserted comes out clean.

Notes

This pie is not meant to be chewy like a chocolate chip cookie. The lack of flour gives the pie a moister texture.
