Warm and creamy ham and potato soup with half the calories! This is a great recipe for Weight Watchers and tastes like it’s full of cream.
It’s the first week of the new year, which means exercise and dieting are in full swing for people everywhere. I find myself jealous of the guy on “The Biggest Loser” the other night who lost 22 pounds in a week. Wouldn’t that be fabulous? But since we live in the real world and the rest of us aren’t on the Biggest Loser ranch, we’re left to fend for ourselves and work our hind ends off on our own. Thank goodness for the other help we have out there!
This soup is a light recipe that many Weight Watchers members use in their point system. At 4 points per serving and only 148 calories (say what!?), this delicious potato soup is one that you don’t have to feel guilty about eating. I made this for my family for dinner and my husband liked it more than the other potato soup recipe I’ve made that’s full of heavy cream and other additives. There really is hope out there! And to top things off, the crock pot does all the work for you. Oh happy day!
Slow Cooker Ham and Potato Soup
Ingredients
- 7 c. potatoes diced into small chunks
- 1 c. onion diced (or large chunks, if using for flavor but removing later*)
- 1 large carrot chopped
- 2 c. ham diced
- 5 c. hot water
- 5 chicken bullion cubes
- 1/2 c. milk
- 1/2 c. sour cream
- salt and pepper to taste
Instructions
- Make broth by dissolving bullion cubes in hot water.
- Place potatoes, carrot, and onion in a slow cooker. Place diced ham over the veggies and pour broth over top.
- Cook on low for 5-5 1/2 hours. *I remove the large chunks of onion at this point and throw them away. Remove half the potatoes and smash; return smashed potatoes to the crock pot.
- Add milk and sour cream; cook for 10-15 more minutes. Add salt and pepper, as needed.

This recipe is one of our very favorites when we’re trying to lose weight! And because it has so few calories per serving, I don’t feel guilty about eating a roll or two with it. We love this recipe!

Made this tonight with ham and it was a nice soup and very filling. Husband says it was good but not something he would want more than once because he said it was bland. I liked it though and wilk make it again but with mkre spjce to please hubby. Thank you for sharing the recipe 🙂

Nova, my husband would agree with your husband on this! I guess that’s why it’s a Weight Watchers recipe and so few calories! We found that if we used the turkey bacon instead of the ham we got more flavor, after making it both ways. Thanks for the input! Glad you liked the recipe!

My family absolutely LOVES this recipe. I have made it many times and it is always gone the next day. I can’t get my 1.5 year old to eat anything, and yet, he will eat all of his portion, plus any carrots he can get from my bowl.
If you need to buy ham for this and don’t like having extra ham left over, just buy a quarter and use half for this recipe and then the other for ham steaks.

Just made this soup and ate a bowl – it’s delicious! Not bland at all – maybe the reviewers who said that forgot salt or didn’t use the right ham etc. I don’t know but I can’t wait for dinner time to have more of this soup!

Has anyone ever tried freezing this soup? My sister and I are trying to make our lunch and dinner meals for the whole week every Sunday. This week I was going to make this soup but that means I have to freeze some of it for later in the week. Would this separate or taste mealy after being reheated?

Scrumptious! I loved this. I traded out the ham for Turkey bacon and added a couple more potatoes, was perfect. I really enjoyed the fact that it was not real heavy. I am throwing out all my other Potatoe soup recipe’s for this one. Thank you …

We have made this recipe twice and love how light and simple it is. However, we have found that the cooking time is not sufficient to cook the potatoes. Last night we pulled the potatoes out and finished cooking them by boiling on the stove. Has anyone else had this issue?

Hi Courtney! Thank you for the comment. The cooking time can definitely vary depending on how large you cut the potato chunks. After the cooking time you check the potatoes by poking one or two with a knife to check for doneness. You could also try cutting the potatoes into smaller chunks since they end up being smashed up at the end anyway. Thanks again for the comment! I will add these notes to the recipe.

I think this is a very tasty recipe and I’ll make this over the weekend. The only think I’ll change is I’ll substitute Chicken stock/Vegetable stock for the water and lose the bullion cubes. For me they’re just to salty and I much rather have the stock, homemade if I have it, as I think it adds more flavor.
