Mini Corn Dog Muffins
Soft and fluffy corn muffins with a hot dog center. A perfect dinner or snack idea for kids!
Ingredients
- 1/2 cup butter, melted
- 1/2 cup sugar
- 2 large eggs
- 1 cup buttermilk
- 1/2 teaspoon baking soda
- 1 cup cornmeal
- 1 cup flour
- 1/2 teaspoon salt
- 8-10 hot dogs, cut into 1-inch bites, uncooked
Instructions
- Preheat the oven to 375° F
- Combine butter and sugar in a medium bowl with a whisk; add eggs and buttermilk.
- In another medium bowl, whisk together baking soda, cornmeal, flour, and salt. Then, whisk the wet ingredients into the dry ingredients a little at a time.
- Grease a mini muffin tin with nonstick spray and place 1 Tablespoon of batter into each cup. Place one piece of hot dog into the center of each cup.
- Bake for 8-10 minutes, or until cornbread is golden brown in color. Cool before serving.
Notes
These little muffins are delicious served with ketchup and mustard for dipping!
