The holidays will be here before we know it! I’m already so excited for Christmas desserts. But I’ll tell you what, that’s only partly why I’m sharing this recipe for Peppermint Bark Brownies. This recipe comes from my friend Aimee’s new cookbook, 50 Fixes for Brownie Mixes!

All of the recipes start with a brownie mix with extra ingredients to make the specific treat. If you like making decadent desserts without all the work, you need this cookbook!
The Peppermint Bark Brownies in the cookbook have made it to my regular holiday dessert list. We made this brownies for Sunday desert and I couldn’t believe who fancy they seemed. I’m not usually one to use the term “fancy” when describing a dish, but they seriously looked and tasted like I bought them from a bakery. We loved them! And it’s your lucky day because you’re getting a sneak peek of Aimee’s cookbook with this recipe. It’s a goody!
Peppermint Bark Brownies
Ingredients
- 1 18oz box brownie mix, plus eggs, oil, and water listed on the back
- 1 c. semisweet chocolate chips
- 1/2 tsp. peppermint extract divided
- 1 12oz bag white chocolate chips
- 1/4 c. crushed peppermint candy canes
Instructions
- Preheat the oven, prepare brownie batter, and bake brownies in a greased 9x13 pan, according to directions on the back of the box. Remove brownies from the oven and allow to cool completely.
- Place semisweet chocolate chips in a microwave safe bowl and heat in 20-second increments until smooth, about 1 minute total. Add 1/4 tsp. peppermint extract and stir; pour over cooled brownies and spread evenly. Repeat with white chocolate chips adding remaining peppermint extract. Spread over semisweet chocolate layer. Sprinkle crushed candy cane pieces over top.
- Allow chocolate to cool and cut into squares to serve. Enjoy!
